It’s my friend’s birthday today so I made her PIE :) and of course I had to make sure I did it all right so I made Gabriel, Julian and I one, too. 😜 Bananas have got to top this baby next time.

Crust; 1/2 c nuts, 1/2c pitted dates, 1/2c shredded coconut and some coconut oil into the food processor and press flat into the pie pan.

Chocolate Filling; 1pkg organic firm tofu, 1tsp carob powder, 1 tsp vanilla extract, 2tbsp rice milk(or whatever, almond/hemp/cruelty free milk!), a dash of salt, 2tbsp agave, 1&1/3 c non dairy chocolate chips. Melt the chocolate chips(on the stove or in the microwave for 2 minutes). Put everything in your food processor till smooth. I added 1/2 c of crushed walnuts and poured into the pie pan. 👅🔥 I processed the tofu a bit first, but you don’t need to. Let it chill a few hours(or overnight). 
I cheated and used store bought soy whip cream, but I really should’ve opted to make a healthier version, I’ve already eaten half. Must save some for the guys…
